Forgive me readers, for I have sinned. It has been several months since my last post. I have many excuses. Some of them are even good. But never mind. All I can do is promise to be better.
I also have not been brewing very much over the last few months. I do have a few “active” beers that I am excited about:
- Erstewhile Tripel – this has been in the bottle for a few months now. It is coming along very nicely. As smooth as an 11% beer could possibly be. Another few months of conditioning will do it a world of good. It is a bit more hazy than I would like- should have done a protein rest with the Belgian Pils.
- Saison Duclair – ditto on the protein rest for this beer (the grain bill was pretty similar to the bill for the Tripel) but I don’t mind as much, since a slightly turbid look is ok with a saison. Besides, this beer is freaking awesome. The Dupont yeast really expresses itself in a funky, almost cheesy way. Delicious.
- MmHhah! – wow, this beer has surprised me. It’s accidentally fantastic. And I don’t even like browns. Especially Browns. The Denny’s Favorite yeast is quite wonderful, really allowing the maltiness to shine through.
- [Beer To Be Named Later] Clear Mountain Scottish Ale – it’s been in glass for over a month. I’ll oak it for about a week and then bottle it. I have high hopes for this one.
On the horizon: something dark, something hoppy, and I’ll blog a piece-by-piece summary of the water chemistry research I’ve been doing over the past few months.
